Our restaurant will take you on a journey of the Tasmanian experience: world-renowned fresh seafood, locally sourced meat, and fresh produce. For $50 you can enjoy a Whisky Tasting Experience with four 15ml tastes of our Callington Mill Single Malt Whiskies as well as a self guided tour.

Our self guided yours allow you to experience the whisky making process, with interactive stations brought to life by audio, images and video.

For $295, you will embark on a personalised whisky crafting experience that includes a tasting session featuring 5 premium Cask Strength Raw Whiskies. With the guidance of a crafting and tasting guide, you'll create your own unique Single Malt Whisky. The package encompasses a 700ml bottle of your personally crafted cask strength Single Malt Whisky, adorned with a distinctive label signed by you. Additionally, you can enjoy a self-guided distillery tour, adding an enriching dimension to your whisky-making journey.

Our experience guide will take you behind the scenes on a whisky making adventure - from barley to barrel. Learn about Solera style whisky. Understand the importance of and the techniques set by our crafts people in the milling, mashing, fermenting, distillation and barrelling process.

The Callington Mill Windmill is our brand and the Callington Mill Heritage precinct is our home. We have lovingly restored the entire, heritage significant village and have transformed the site into an interactive tourist experience using video and audio presentations to bring the complex to life.
