Guests at this stylish restaurant and catering company experience a total immersion of the senses, enveloped in the comfort of the décor, sounds and smells emanating from the kitchen, creative plating and mouth-watering flavours. Showcasing the best seasonal, local ingredients, expect to sample entrées like char-grilled kangaroo fillet and emu kofta, celeriac mash and blueberry jus; before mains sure to entice such as pan-fried salmon fillet, char-grilled zucchini, asparagus, lemon salsa verde and finger lime aioli. Finish with a decadent dessert of quandong and rosella panna cotta, quandong compote and a dollop of cream.

Delicious contemporary cuisine & friendly service
Broken Hill has been quite the surprise to us. Amongst the friendliest people & a town with multiple dimensions of arts & tourism operating beside the mining industry. The Old Saltbush fits perfectly into this mix of old & new world changes in the silver city. The bush tomato roulade was rich but not overpowering. The Atlantic salmon on zucchini, broccoli & mash was perfectly prepared. The mixed grill bush plate with caramelised onion offered really good array of flavours. Throw in a well priced wine list & this was a terrific experience from Lee & her team. If in town make sure to book ahead!
